SPINACH AND POTATO BREAKFAST PIZZA

Ingredients
  

  • One batch painless pizza crust
  • 4 cloves garlic minced
  • 1 onion diced into small pieces
  • 4 small potatoes diced into small even pieces
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 2 cups spinach
  • 1/2 cup of shredded parmesan cheese
  • Good quality oil and balsamic vinegar

Instructions
 

  • Preheat your oven to 425 degrees.
  • Toss your potatoes, garlic and onion, in a large bowl with olive oil to coat and seasonings.
  • Bake your potatoes for about 20 minutes, until fork tender. Remove when cooked through.
  • While the potatoes are baking, prepare a batch of pizza dough.
  • Shape your pizza dough and drizzle it with olive oil. Put it in the oven and bake for 10 minutes until it begins to turn brown. Top with spinach, potatoes and parmesan cheese and put your pizza back into the oven. Let it continue cooking until the cheese is melted.
  • Remove from oven and allow it to sit for a few minutes before drizzling on balsamic vinegar.
