Who doesn’t want a little zucchini with their muffin? I was inspired by this recipe to make these delicious zucchini muffins. I decided to use less sugar; change it from brown sugar to honey and of course I real foodified the rest of the ingredients to fit my style. I was very pleased with these muffins and I think you will be too.
I know you may want to eat all of these and get carried away since you’re practically eating veggies too but just remember this is still a treat! No going overboard — I won’t judge if you do though, they are pretty good.
Oh, one last note. Please, please, please make sure you buy organic zucchini or squash (or buy it non-organic from a very trustworthy source) as conventional zucchini and squash have a high possibility of being genetically modified!
