We wanted to play along at our house. Following the Chopped model, our dish had to contain the following ingredients:
We decided to keep it simple but to use a cooking tactic that we haven’t tried in our house yet: yogurt chicken. This was actually new territory to us, but we heard about it right here on this site from a guest post we had a few years ago and I’ve been meaning to try it for a long time!
Yogurt contains enzymes and acids that work together to break down the proteins in chicken meat, causing it to become more tender. In the end you will taste a bit of tang from the ‘gurt, but it pairs well with the peppers and Italian cheese blend, so don’t be skimpy on this step, k?
Buttermilk contains similar acids and if we were to soak our chicken for a day or two I’d probably go that route. But for us the yogurt worked well and really streamlined our process.
In our house we traditionally do the following routine: chicken in egg wash, then flour, then egg wash, then panko. With this we saved ourselves some work and simply did: chicken, yogurt, panko, panfry. That’s it. It’s easy.
We tried both panfrying and baking in the oven, and by far the panfried version was better– really, was there ever any doubt? If you’re like us and cooking in cast iron then you can take it straight from the stovetop to the broiler, where you pile your chicken with loads of ooey-gooey Sargento.
