I dug up the garden months ago. My lovely plants are all long gone and I’m missing the days of fresh veggies at my fingertips, just a few steps away.
But that’s the burden of winter in the mountains, amiright? The seasons change and so do our pallets. Instead of my beautiful herb garden I have one lone Rosemary bush– which I am utterly grateful for, of course ;). Instead of tomatoes and squash and cucumbers, I have frozen corn, pickled cucumbers and beets, and dried mushrooms.
But you know what they say! When life hands you lemons, you make lemonade.
Or, in this case: when you’re amazing friend gives you a jar of dried mushrooms that she foraged herself, you pair that sucker with the last of your herbs and make Spring Rolls. (If you don’t have those available, just grab the variety pack of mushrooms from your grocery store.)
Except that there’s nothing Springy about this recipe, so I’m renaming them Winter Rolls!

The best thing about dishes like this is that they make a great holiday appetizer! These little rolls are easy to whip up, full of flavor, and packed with enough fun ingredients to fool your guests into thinking that you’re super fancy! And their baked, so you can prep them ahead and time and throw them in oven right when you’re ready to party.
