M-m-muffinsss. Those versatile, easy-to-whip-up single portions of goodness. Individual portions mean no sharing, right?
Muffins vary in healthiness and filings. Some are sweet – dangerously sweet – others are healthy – super healthy. Some are right in the middle – sweet, but not too sweet, and slightly healthy.
These muffins are right in the middle. They’re sweet (white chocolate, oh how I love you) and slightly healthy (tart strawberries – I love you too).
With each bite you’ll get: moist cake with a fine crumb; half-melted white chocolate bits with oozy bits and tart and slightly firm strawberries. You’ll also get a sugar hit from that sticky glaze on top. I love the glaze because it also helps to keep muffins moist. The paper cups help seal in the moisture too – that’s why I almost always bake mine in paper cups.
There’s lots to think about when baking, isn’t there? Don’t worry – I’ve done all the thinking and recipe tweaking for you. All you have to do is follow the recipe and voila! Deeelicious muffins.
Due to their sweetness, I’d recommend these muffins be eaten as a snack throughout the day rather than for breakfast. But then again, these have strawberries. And strawberries are fruit, strawberries are healthy – and it’s good to have a healthy breakfast, right?
