Every time I think of bananas, Despicable Me 2 comes to mind. You know, that movie with those cute yellow minions running around getting peoples’ jobs done that have adorable voices that say “ba-na-na-na-naaas. Hehehehe.” That’s by far my favorite part.
So I have a banana recipe for you today. A ba-na-na-naaaa recipe. Hehehehe.

I usually buy my bananas when they’re over ripened and are on clearance. I peel them then bag them up in snap lock bags and freeze them. They easily last for 2-3 months in the freezer so I always have bananas at my disposal, should the urge to bake something banana-y arises. When I need bananas, I simply defrost them in the microwave. As they become very mushy when they’re frozen then defrosted, I don’t recommend using them whole – mashing them is definitely the way to go.
This white chocolate and banana loaf is just like your average banana bread but with chocolate, making it sweet and moist. The top comes out very crispy while the inside remains moist and fluffy. And if you’re lucky, you may get a chocolate chunk in your slice that’s melted and oozy.
I like to slice my banana bread thick and eat it warm just on its own, but if you wanted to break the sweetness a little, you could generously spread butter on it and eat it that way. Either way, this white chocolate banana loaf is a perfect snack on a cool, wintry day.
