These white chocolate and cranberry cookies remind me of the Subway cookies – soft, thick and chewy with generous amounts chocolate and cranberry chunks.
I love Subway’s cookies. All of them. The macadamia and white chocolate cookies, the double choc chunk flavor and especially their cranberry white chocolate cookies are just to die for. The cookie is perfectly balanced: they’re soft, think and chewy. Plus, they’re generously filled with chocolate, nuts or dried fruit.
This is precisely why I love this recipe. The cookies turn out soft, thick and chewy (if you don’t overbake them, that is). And buttery and moist of course. Oh yes. To me, they’re very similar to the Subway ones. Except these cookies are cheaper ($2 per cookie is a bit steep, no?) and don’t contain any nasty preservatives or additives.
I’m even considering making one oversized cookie and topping it with a few scoops of icecream, then drenching the thing with caramel. Oh my. Yes, yes I think that sounds good. Excuse me while I go and make myself that heart-attack of a dessert.
