Anytime, any day, when given the choice between meat and veggies I’d pick the veggies. Hands down. Every time.
The tricky thing is getting my family on board as well. These days my tween seems to have an aversion to all things veg and my husband just doesn’t get satiated by the traditional options, like salads.
But, never fear! I’ve got your back today. Because I’ve rounded up a collection of 15 (actually, it’s 16.. and it would have been a lot more, I was getting a bit carried away with so many possibilities!) sandwiches that are so good you won’t even miss the meat! From spicy black bean burgers to roasted garlic and quinoa burgers, vegetarian sandwiches are by far one of my favorite ways to pack in a bunch of veggies and eat light without getting, well, boring.
