It cannot be overstated how much I adore good, simple food.
Right now my herb garden is getting settled and I’ve got a yard full of onions and garlic growing as well. Spring is certainly in the air, and that means every day I get to enjoy fresh, delicious foods that are easy to make (and easy to clean!) with just a few ingredients and a lot of love.
This recipe is one that I’m so glad to have thrown together– it’s beyond delicious and certainly going to be a staple meal for us! If you’re fortunate enough to use cast iron, you can throw this whole thing together with just one pan. Although the potatoes take a while to roast, it only requires a few minutes of actual hands on cooking. And did I mention that it’s really, really delicious?
Bertolli is celebrating 150 years of bringing Tuscany to your table. With its authentic taste and quality ingredients, Bertolli pasta sauces are a key ingredient in homemade dishes. So in true Tuscan spirit, we begin with clean potatoes, generous amounts of salt and pepper, fresh crushed garlic and a handful of fresh Oregano and Rosemary.
Pierce your potatoes all over with a fork and then douse your dish with olive oil. Roast it.
Then remove your potatoes from the pan and add your Bertolli Alfredo Sauce. Just mix it right in with all of those herbs and garlic. Cover with fresh spinach and let it cook down.
Try to refrain from swooning as that spinach cooks down and your pan is full of creamy, garlic-and-herby spinach.
Smash your potatoes and add them back in.
