Don’t let the title confuse you, friends. What you may commonly know as “biscuits”, we Aussies refer to as “scones”.
Biscuits here in Australia are the sweet type: chocolate chip biscuits, jam thumbprint biscuits, chocolate biscuits, Oreo biscuits… you get the idea. Australian biscuits = cookies. Same thing.
Scones, however, are something completely different. Scones in Australia are usually made with butter and flour (and a few other simple ingredients), baked, then enjoyed with lashings of jam and a generous dollop of cream. That’s the sweet type. So American biscuits = scones.
There are savory types of scones, too. Like this tomato and basil version I’m sharing with you today.
Healthy, flavorsome and oh so good. And did I mention healthy? Yep, these beauties are baked with whole wheat flour and with greek yogurt, making them healthier and packed with protein.
I enjoyed mine on their own, hot out of the oven, although they’d taste just as good when smothered with butter. Be sure not to overmix or overbake these beauties or they’ll turn out hard and dry. Very slightly underbaked is better than very slightly overbaked, remember that.
