Food is social. Very social, I’ve found. How many of you find yourselves saying Let’s catch up over coffee or how about a lunch date? or I’ll shout you dinner tonight multiple times a week? I know I do that fairly often and enjoy eating a well-cooked meal or sipping a well-brewed coffee while catching up with people I love.
And so with holidays (in particular Thanksgiving), food has become a major thing. It shouldn’t detract from the focus of the celebration, I believe, but food really has become a central point to many of people’s celebrations.
So you have your Thanksgiving turkey all stuffed and golden and crispy in the center of your table. Its aroma fills the house and you can’t wait to carve into your juicy piece of poultry. And then there are the sides: roasted veggies, salads and other goodies that will make your mouth water at just the sight of them. With such a glorious spread, you’ll want sides that complement the centerpiece, are tasty and are easy to make.
And this is where these stuffed mushrooms come in. They’re not your traditional mushrooms. No, these are a lower fat version with the inclusion of bacon. Yes. You heard me right. Lower fat. Bacon. Excited much?
You see, these beauties are stuffed with cottage cheese. And you know what? You won’t be able to tell the difference between these and the other version. They taste just as amazing. They’re also stuffed with parmesan cheese and are seasoned with herbs and garlic. Shaved bacon is then lovingly placed atop the cheese stuffing. They’re then roasted to their golden perfection and the bacon becomes crispy. Oh man, I am drooling just thinking about these mushrooms.
The stuffing is creamy and decadent and lower in fat – meaning you can enjoy more of these mushrooms without feeling too guilty; they’re flavoursome thanks to the herbs; and they’re crispy and salty thanks to the bacon. They’re the perfect side to your Thanksgiving feast and they’re easy to make. Plus, you can make the filling a day in advance and leave it covered in the fridge until you need to use it.
