At this time last summer I was about 2 months pregnant and very much disturbed by cucumbers. I don’t know what it was about them.. maybe the fact that they equated to work (i.e.: weeding, picking and processing all those plants). But since then I felt like eating them has been a chore.
But everything has changed with this recipe.
It’s sweet and spicy and when you throw in those nutrient packed extras like sunflower seeds and roasted bell peppers and fresh cilantro it turns this simple side dish into an entire meal.
