I feel like in the Spring time I come out of hibernation; I literally feel like a whole new person. My fingers long to play in the dirt, my toes are ready for the soft touch of grass; I play more and I eat lighter.
I don’t think I’m the only one, either. April is National Soyfoods Month and in that honor they are encouraging people to swap out a recipe with a lighter, plant based option. We’re not big meat eaters in our house so for us it’s pretty easy to swap out the main offenders.
One of my favorite swaps is ditching the red meat for veggie burgers. We have a few great recipes right here if you’re in the mood for Black Bean Burgers with Portobello Mushrooms & Cheddar or a Black Bean Burger with Chipotle Mayo Sauce. (I may or may not be drooling just thinking about it right now).

Today we’re sharing another easy swap, and it’s in the form of Sweet & Sour Stir-Fry, where we’ve swapped out House Foods Tofu in place of the chicken or pork that we’d traditionally use. The end result is a fun combination of acidic and sweet. Toss some sweet onions, fresh broccoli and Tofu over some rice and you’ve got a quick and easy meal that’s packed with protein!
