This is the story of how a little introvert like me finally won my neighbors over. The power of food, amiright?
Last week our neighbor, who we haven’t really gotten a chance to meet yet, did us a huge favor and mowed our grass for us while we were waiting for the riding mower to be fixed. I wanted to thank him by making him food but I agonized over what to make.
I wanted it to be simple and I wanted it to be food that they’d enjoy but I didn’t know anything about them; since I make a living off of cooking it would be really embarrassing to send them over something that they wouldn’t like. You see my predicament? So I turned to some of my favorite blogging friends who assured me that good food is good food no matter what, and just to make whatever I would want to eat.
Although there’s none growing here in Virginia yet, April and May are the perfect months to get sweet, fresh corn from Florida. For me fresh veggies + cheese = the best combination for a delicious meal that no one can resist.

I don’t think that corn dip is anything new, but the fresh veggies really make all of the difference. The sweetness of the corn and yellow peppers balances out the saltiness of the cheese. By using corn on the husk we get to keep that great texture as well.
Toss with some fresh tomatoes and cilantro and you wind up with a dish that’s sure to please even the pickiest of neighbors. It also makes a great dish to share at a potluck or your next bbq!
