For me the best part of any crumble is always the crust. Am I right? Yeah, why wouldn’t it be, typically it is mostly butter and sugar! Well, if you’ve been to my site you’ll know I try to make as much of my sweet stuff as refined sugar-free as possible, take for my example my No Sugar Peanut Butter Cups or my Coconut Pear Crisp
So When I set out to make this Rhubarb Crumble, I wanted an awesome crust and I wanted a lot of it. I find so many crisp or crumble recipes never have enough crust for me. This dish is a little tarter simply because I don’t use sugar with the rhubarb, (I like it tarter though) but you can always up the apple juice or drizzle a little honey on the rhubarb.
