Most days, I love to bake and experiment in the kitchen for yummy new recipes. It’s fun, therapeutic and, of course, eating the end product is always a nice reward too!
But these summer days have been so hot that I just haven’t had much desire to get in the kitchen very often. And during these times I’ve been looking for a quick but filling snack that doesn’t require a lot of work.
On these days, I like to be able to grab a few staples from the pantry and some fresh herbs and veggies from the garden, throw it all in a big bowl and chow down. And thus was born.. the Spicy Southwest Deviled Avocado.
Packed with black beans, sweet corn, spicy chorizo and onions and herbs, it’s kind of the perfect combination. Right?? Right!
The inspiration for this dish was obviously avocados, one of my favorite foods. So I was really excited to come across this avocado oil Mayo from Chosen Foods.
I grew up avoiding mayonnaise for the most part, which are made with GMOs and use seed oils like soy, corn and canola. But this is one I can get behind! Since Chosen Foods 100% pure mayo is made with avocado oil it’s high in Omega 9, plus it’s non-GMO and made with cage-free eggs.
It really means a lot to me when I find brands that reflect the values that our family has, so incorporating them into our recipes really inspires me to get my butt back in the kitchen and put together some new foods.

And now, let’s talk about these deviled avocados. The filling is light and creamy, the toppings are hearty and filling, it’s literally the perfect snack on a hot summer day! You can eat this on it’s own with a spoon (like my husband prefers to) or with tortilla chips (like I prefer to), or even as a filling for tacos, quesadillas or on toast.
