Last week we talked about how much easier it is to find gluten free products to suit your tastes and budget. It’s especially important for people like us who live out in the middle of nowhere to have access to the foods that our family needs without hiking a few cities over to find the specialty grocery stores.

We love things that are easy to grab on the go, and I’m a big fan of Udi’s. I like knowing that their chicken is raised without antibiotics and I think that others can appreciate a convenience food that is also Gluten Free.
What better way to serve burritos than with a side of smoky, spicy lentils?
The best thing about this recipe is that you can make a big batch, freeze it into portions and just heat up a serving as needed. You can serve these lentils as a meal (as demonstrated above) but we also love it as a dip or as a vegetarian filler for chili, tacos, etc. It’s also naturally gluten free and a great source of protein!
