For the past several months I’ve been sitting on the sidelines, quietly twiddling my thumbs and patiently waiting for the bacon craze to end.
Don’t get me wrong, I love bacon. A thick, salty piece of meat that delivers that certain je ne sais quoi to your dish.
I do, however, think some people may have gone a little overboard with bacon in the past [cough-baconbowl-cough].
But this dish, my friends, is not just another trendy bacon dish. It’s simple, it’s delicious, and it’s got just enough salty, pepper-crusted bacon to impressive your friends and family members.
Who says that great food has to be complicated? I’ll leave the burrito fillings up to you. For me it doesn’t get any better than a simple tortilla filled with rice, fresh herbs and shrimp that are just lightly sautéed in butter. Also, you can make your own tortillas and you won’t regret it.
