Thank you to Green Giant for sponsoring this post. As always, all opinions are my own!
I think that we are all in agreement that brunch is the best meal of them all, right?
In our house we’re often faced with the dilemma of my children wanting to eat something savory and packed with veggies (breakfast stir fry, anyone?), and my kids wanting to eat something starchy and sweet (their favorites are French Toast, waffles, pancakes), and my husband wanting to eat… well.. a pile of meat.
Brunch is one of those times when I can easily fuse all of those things together and come up with something that satiates all of our needs. Like this hash, made with cauliflower, sweet potatoes, sausage, apples, and spinach. Topped with a runny fried egg and you literally have perfection on a plate!
They say that good things come to those who wait, but I propose that the best meals are ones that come together QUICKLY and EASILY. So trust me when I say that I found a solution that helps bring this together on the fly.
Green Giant has launched a new line of frozen Riced Cauliflower which you can easily find in the freezer aisle at Walmart. It will save you so, so, so much time!
- 100% made with vegetables
- 70% fewer calories than rice
- Gluten free and come without sauce and seasoning so you can prepare them just the way you like.
(And this is off topic, but I tried a few of their other frozen Cauliflower options and they’re really delicious– try the mashed cauliflower with bacon and cheese and you won’t be disappointed!).
They have other varieties of mashed cauliflower as well, but the sweet potato blend is perfect for this breakfast hash! The slightly-sweet-but-not-sugary flavors blend so well with the apples and sausage, creating a well balanced dish that is packed with nutrients, texture, and flavor.
