Lentil soup is the most underrated, underappreciated soup of all time. Not the canned stuff you get at a supermarket. I’m talking the rich, garlicky, savory flavor of authentic lentil soup that all great Middle Eastern restaurants seem to have perfected. If you’ve ever experienced it you know exactly what I’m talking about.
I’ll never forget when I first tried to replicate lentil soup after coming home from a wonderful Lebanese restaurant near me. It turned out awful.
Fortunately my experience turning unhealthy recipes into healthy ones has taught me the importance of resilience when it comes to finding that delicate balance between “healthy” and “tastes amazing.”
