We are in the height of tomato season, y’all.
I’ve been staying up way too late trying to get salsa and sauces ready in the middle of the night, the only free time I have to work on preserving these yummy vegetables. Er.. fruits. Just trying to get ahead so that this winter we can crack open a jar of fresh tomatoe-y goodness.
During the day is a different story, though. It’s often too hot to have the stove going. My kids love pasta, but making fresh sauce turns a quick weeknight dinner into an entire ordeal.
I was perusing Yahoo! Food and found the perfect solution. If you’re not familiar with their site already, they have a variety of topics all related to (you guessed it!) food: helpful articles, delicious recipes, tricks and advice, photos,stories on the top food trends, the best cooking tools, new techniques, and everything you need to feel inspired.

I found this recipe for No-Cook Tomato Sauce and adapted it to fit my family’s picky eating habits. Fresh heirloom tomatoes, handfuls of spinach and just a pinch of high quality salt and pepper is all I used. Check out the original recipe here for No-Cook Tomato Sauce!
I love how easily this recipe came together. It’s as simple as layering the ingredients, topping with fresh, hot pasta and letting the food do the rest. This is gonna be a new staple in the Johnson household.. especially when topped with a lot of fresh, shredded cheese!

Ingredients
- 2 1/2 pounds of mixed tomatoes
- 2 handfuls of fresh spinach
- salt and pepper to taste
- 1 lb angel hair
Instructions
- Cut half of the tomatoes into roughly 1/2-inch chunks. Coarsely chop the remaining tomatoes. Add those to the bowl, be sure to include the juice. Season the tomatoes generously with salt, pepper and olive oil.
- Sprinkle on basil.
- Layer with spinach.
- Now make your pasta until it's al dente. Drain it and dump it on top of the layer of spinach, spreading it out so it covers the vegetables evenly. Let it sit undisturbed.
- After two minutes is up, mix it together well. Give it a taste, adjust with salt, pepper and serve immediately.
