At Easter time my family got together to celebrate a wonderful, made-from-scratch traditional dinner at my husband’s grandmother’s house. We dined on the usual favorites: ham, mashed potatoes, fresh veggies and salad. But this year my husband’s eleven year old cousin decided to make deserts.
Considering who they were coming from, they were absolutely adorable. Little birds in a nest: Rice Krispy treats with dyed coconut and peeps sitting on top. Everyone ooh-ed and ahh-ed for her. But the real foodie in me thought, “Don’t they have any idea what’s in this? The high fructose corn syrup, processed cereal, food coloring?” And I refused to eat them.
..just kidding. What I actually did was eat mine, and then when no one was looking I ate another one.
Look, I’m not saying I’m proud. But I spent the majority of my life eating stuff like this and I have the will power of a child.
And it was so marshmallowy and coconutty and I liked it. So sue me.
But yeah, this is still junk food, so don’t go thinking it’s all healthy or anything –I’m not kidding myself. This is actually the first time in my life that I’ve ever bought cocoa cereal, and I don’t plan on making a habit out of it.
I chose to make these Rice Crispy Treats with slightly-better-for-you ingredients. If you use what I recommend then your treats will be gluten free, have no dyes or artificial colors, no high fructose corn syrup, made without GMO’s, are dairy free and even vegan. I haven’t tried it, but I bet these would even be awesome with a nut-free butter, too.
They are so so so good.
