I’m always on the lookout for easy, tasty cake recipes. I like to keep a few different recipes handy and make them when we have company, as nothing beats a homemade cake fresh from the oven.
Recently, I’ve discovered that adding yogurt in cakes gives them a wonderful texture. I’m not quite sure how it does it, but yogurt gives cakes a denser, moist texture that cannot be achieved any other way. The cakes aren’t dense like pound cakes are, nor are they crumbly like coffee cakes usually are. Yogurt gives them a distinct, unique texture that’s light, moist yet dense.
This passionfruit yogurt cake is simply wonderful. It can be quickly whipped up when you have company coming (or simply for when you’re having a craving for cake!). The cake itself is not very sweet so the passionfruit and vanilla glaze on top is a must: it adds the sweetness the cake itself lacks.
I baked my cake in a large 11” pan as it cooks quicker than when using smaller tins. Not only does it cook quicker, but I like the idea of a larger yet thinner cake. It gives you an excuse to eat massive slices of cake, right?
