Muffins are, hands down, my all-time favorite breakfast food. They’re nutritious (well that’s depending on what you put in them, I guess), tasty and are the quickest breakfast ever known to mankind.
You’re probably thinking, “how can baking a batch of muffins in the early hours of the morning possibly be the quickest breakfast ever known to mankind? That don’t make no sense at all.”
You see, I like baking muffins in advance and freezing them. Because really, baking muffins in the morning? Ain’t nobody got time fo’ dat. Well, at least I don’t have time for that – I like my sleep! However these muffins are quick to make so you could easily have these out of your oven and ready to eat in about 35 mins. I prefer to bake my muffins in advance, freeze them, then enjoy extra sleep in the mornings. So come breakfast time, you microwave a muffin for 30 seconds of so then stuff it down your pie hole because it’s hot, soft and fluffy.
