“Monday mornings are quiet, lovely affairs in our household” said NO ONE EVER. Monday mornings – or any mornings in particular – are probably the most hectic and stressful parts of my day.
For those of you who work and do the routine school rounds, I take my hat off to you. How on earth do you manage to be out the door bright and early with everyone and everything organized? School bags to pack, lunches to prepare, hair and teeth to be brushed, little faces to be washed… not mentioning YOUR hair and makeup has to be done, your lunch packed and so on.
I don’t have kids yet – so I really shouldn’t be complaining about my mornings. Showers, getting dressed and ready for the day, making and packing lunches, grabbing a quite bite to eat before rushing out the door… Goodness I’m feeling stressed just typing this out.
So, wherever possible, I try to make my mornings a little easier. Like setting out my outfit the night before, or preparing my lunch the night before.
Breakfast is another excellent plan-ahead option, and these muffins are perfect for that. You make the batter, leave it in the fridge overnight and bake it the next morning. Fresh, hot muffins for breakfast? Yes please.
