Raise your hand if it’s only JUST hit you that Christmas is just a few weeks away and you’re going to be doing a ton of running around over the next several weeks. School events and church events and playgroups and you’re supposed to bring a side dish to all of them?
Don’t get me wrong, I love to cook; I especially love to cook for other people! But what I love the most is creating cute new ways to serve traditional favorites that make my dishes stand out– even when there’s nothing particularly different about them.
I’m specifically thinking about playgroup parties, but I think this logic would apply to any typical potluck: a million tiny hands, covered in germs, over serving themselves. And then there’s the issue of figuring out how much you want to bring and how you’re going to display it.
As with most problems in life, the solution can be found in Cupcake form.
A quick search on Pinterest showed me some drool worthy options for savory cupcakes that you could bring with you to potlucks. This macaroni and cheese looked especially delectable. Or what about stuffing?
But the one that I chose to tackle today were the mashed potatoes. Served with cheddar cheese and chives, maybe with a sprinkle of bacon and they’re fabulous. Or kick it up a notch and add some fresh artichoke hearts, capers and mozzarella. You see.. the options are only limited by your imagination!
Of course, when we’re talking about toting things around to parties, the first thing I think of is convenience. And so today, in addition to sharing about this great potato recipe (coming up!), I wanted to tell you about this super convenient way to tote them as well. The one pictured above is the Party Serving Kit from Rubbermaid, which makes it convenient to store cupcakes, mini cupcakes and deviled eggs.
