In our house, we typically figure out dinner by rummaging through the fridge and trying to piece together ingredients we already have to come up with a delicious (although sometimes unconventional) meals. That makes Chopped challenges extra fun, because they’re right up our alley! If you’re not familiar, it’s a cooking challenge where you’re given a list of ingredients and you need to use those to come up with a unique dish.
First, let me tell you a bit about what I created but scroll through the rest of the post to see how you can vote and enter to win!
This month the theme is COMFORT FOODS, and the ingredients that must be used are: cauliflower, mushrooms, leeks and Sargento® Sharp Cheddar Fine Cut. I know what you’re thinking: This one is too easy.
With that combination you could make basically anything and it’d be delicious! We debated between a yummy. cheesy quiche with a cauliflower crust but ultimately we decided on the Mac Daddy (sorry, pun totally intended) of comfort fooods: Macaroni and cheese.
If you didn’t think it was possible for Mac n’ cheese to get any more delicious, or any more comforting, then think again. We roasted cauliflower and sautéed leeks and mushrooms in fresh lard, then combined everything together in with a super simple cheese sauce and then we devoured the entire thing in one sitting, because I’m pretty certain that this was the BEST thing that I’ve ever tasted. Seriously.
The dish was comforting and completely decadent, but with the addition of all of those soft buttery vegetables it took this side dish (or meal, if your’re like us!) to a whole ‘nother level.
