Happy National Biscuit Month!
According to The Nibble, September isn’t just all about Back to School goodies – it’s about biscuits too. You know I don’t need an excuse to bake, but being National Biscuit Month, I decided to celebrate this momentous occasion with these crumble, buttery, melt-in-your-mouth Lemon Melting Moments.
Here in Australia, we have this super duper awesome supermarket chain called Aldi. This German-based supermarket is revolutionizing the way I shop. And bake, surprisingly.
They don’t have shelves like normal supermarkets do – instead, they keep the goods in their original boxes and line these up on a raised platform. This saves time and money, which in turn saves me money (though not time. I wish). Most of the goods Aldi sells are in-house brands; though the quality is so high, you’d never guess you were purchasing generic-branded items.
Unlike most supermarkets, Aldi carries a small range of fresh fruit and veg and an even smaller bakery range. Raisin toast, Turkish bread and lemon and jam tartlets are about all they stock. Oh. And melting moments. Aldi have the biggest (think of the size of your palm), crumbliest, butter-iest, bestest-ever melting moments ever known in the history of mankind. I kid you not. They’re even better than if they were made fresh in a dessert bakery.
Soo… I deceided to make my own melting moments. Lemon flavoured, no less. Because they’re a sandwich with filling inside, I prefer to make mine cute and bite-sized.
This recipe comes together very quickly and I guarantee you, they won’t last long. Half of this batch disappeared on me in less than a few hours.
