As this weather constantly reminds me, Spring is just getting started. We’ve been enjoying making cute Easter crafts and picking out recipes to try and I decided to pull out this ol’ recipe from last year!
Lemon Ginger Poundcake: really, need I say more? Two of my favorite flavors, so light and sunny!
I enjoyed this recipe so much that I made two batches; one in cake form the other cupcakes. I actually prefer the traditional bundt cake style, but the cupcakes were so adorable and a fun spin on the ordinary. These were topped with cream cheese frosting (actually, the one I used from our carrot cake squares), fresh lemon zest and powdered ginger.
