So much for taking a holiday break, right? I just couldn’t resist. I had to pop in real quick and share this recipe for y’all. I know it’s last minute and may not reach your eyeballs in time, but this leftover ham pot pie is a really great way to use up any ham that managed to survive your holiday meals!
What I love about meals like this is that they are a cinch to put together with just a few minimal ingredients. Because ham has such a strong flavor you only need a few other things, like a pinch of fresh thyme, and you are good to go.
This dish will easily serve a large crowd and make you look like a domestic superstar. It can double as a breakfast dish (that’s actually how we ate these, breakfast the next morning with our Thanksgiving leftovers!)
