This slice will make you a partaker of Australian foods. By biting into the layers of chewy brownie, sticky jam and crispy coconut, you’ll partake in the Australian delicacy we call the lamington.
Lamingtons, generally, are squares of sponge cake that are coated in chocolate frosting then dipped in shredded coconut pieces. Sometimes two sponge cake pieces are sandwiched together and jam is used as the filling, before they’re coated in the chocolate and coconut.
So these lamingtons are a slight twist on the original, but all the important components are there: chocolate, coconut, jam and cake.
These are also a LOT easier to make than the original – and that’s another reason why I like them better than the sponge cake version. No dipping, coating or waiting for chocolate frosting to dry.
This cheat’s version of lamingtons is a must-try. I took an entire pan of these to work one morning and they disappeared. They thick layer of chewy coconut on top is my favorite bit.
