Here in Australia, it’s summerrrr!! Helloooo sunshine, icy poles, pool parties, barbeques and stone fruits. No more fires, snow, hot cocoa or freezing toes. My favorite season is here!
Seeing that summer is here, it’s time to celebrate in the kitchen. Celebrating with food is always the go, right?
Coconut and kiwifruit are tropical, summery flavors. When the words are mentioned, a deserted island with lots of coconut trees comes to mind. Blazing hot days with clear blue skies and crisp, clear water also comes to mind.
Imagine yourself sitting on a deserted island sipping a pina colada and munching away on one of these muffins. I don’t think life gets much better than that.
As a side note… make sure you do not overmix the batter as it will cause the gluten to activate too much. Put simply, your muffins will turn out dry! Also while these are baking, make sure you keep a very close eye on them and do not over bake them even by a minute. They’ll turn out dry. As soon as a skewer inserted comes out with only a few moist crumbs, these muffins are done.
