Kale. Now that the weather is cooling down that’s all I see, everywhere. I have nightmares about it. Okay, well, I’m just kidding about the nightmares thing, but I’m not secretive about the fact that I don’t care much for this green stuff. I’ve tried kale chips, ugh. I’ve tried stewing it in greens, double ugh. So would you believe me when I say that I’ve found an incredibly healthy way to enjoy this super food, that your kids will [probably] like too?
When I was looking online for another way to prepare pumpkin seeds, I had one of those aha! moments when I found a recipe that called for all of the things that I was trying to use up. That stinky kale, my delicious pumpkin seeds, the uber healthy stock I had made earlier in the week, garlic that I had gotten from the last CSA batch, etc.
The end result is something surprisingly delicious for how nutritious it is.
