For as long as I can remember, I’ve been wanting to try my hand at making Panzanella. Every year over garden overflows with tomato and I just imagine how good hey would be, quartered and tossed with some delicious crusty bread and drizzled with oil and vinegar. I’m not even kidding when I say that I’ve been fantasizing about this salad for YEARS, but never gave it a try. I think the reason why was because I was waiting for some magical ingredient to come along and inspire me… This week, that inspiration struck me! What this salad really needed was the fresh taste of authentic Italian sausage! One thing they’re featuring are these yummy Carando sausages and meatballs (which my meatball-loving family also enjoyed.)

Inspiring, right?! And to me, one of the best things about this meal is that it can all be prepped ahead of time and you can just combine it at the last minute to eat. In our busy house that flexibility is a must! Before serving, add your cooked Carando Sausage and bell peppers to take this salad from great to totally irresistible!
