There are many traditional foods associated with Christmas – cranberries, pavlova and ham – to mention just a few. Peppermint and gingerbread would have to top the list though. Peppermint is a more modern tradition I think, while gingerbread is a much older tradition. No Christmas is complete without enjoying a batch of fresh, honey gingerbread cookies.
I love this recipe – the cookies turn out softish, chewy, and very flavoursome. I’ve added this recipe to my ‘favourites’ list and these cookies will be made year-round in my house. Christmassy food doesn’t have to be limited to December only. My batch didn’t last longer than 48 hours.
They’re just as tasty on their own as they are decorated with royal icing. I love versatile recipes like that. Decorate if you’ve got the time and patience to invest, or eat plain if you prefer. Box (or plate) them up, and watch them disappear!
