I love this recipe – the cookies turn out softish, chewy, and very flavorsome. I’ve added this recipe to my ‘favorites’ list and these cookies will be made year-round in my house. Considering a batch of these cookies doesn’t last longer than a couple of days, you’ll find yourself making them throughout the year. They don’t have to be just a holiday time treat, these honey gingerbread cookies are perfect any time you want that warm, “feels like home” cookie.
You want a really good quality honey, not just a random off-the-shelf squeeze bottle. Bee Harmony Honey is 100% handcrafted raw honey the way nature intended it. It’s the closest thing you can get to having your own hives in your backyard. They have several regional varieties, so depending on where you live, you may be able to find a honey from your area. For example, look how different these two jars look from different regions!
Not only do they make delicious honey, but Bee Harmony Honey is committed to taking care of bees and educating others about how they can help. Check out their website to read more about their mission and learn about what it means to be Beesponsible.
Because they’re flavored with honey, they are just as tasty on their own as they are decorated with royal icing. I love versatile recipes like that. Decorate if you’ve got the time and patience to invest, or eat plain if you prefer. Box (or plate) them up, and watch them disappear!
And don’t worry, no one will tattle if you sneak a spoon of honey. It’s quality control!
