Alright moms, we are still going strong in back-to-school mode around here. When did your kids make the adjustment? We’re about two weeks into it here.
Which means the kids are already looking for more different things to pack in their lunch boxes.
But the thing is, my kids don’t want exciting, they just want basic variations of the usual. They’re not particularly keen on big flavor or spices. Which means a lot of times I’m making a set of food for them and one for myself, because I can’t stand eating the same things twice.
So today I present to you my spin on the ordinary: a honey dijon tuna fish sandwich.
The idea behind this tasty sandwich is that you can mix it up however you want for the kids, then toss in a few more sophisticated ingredients to take it to the next level. And if you’re thinking, “honey in tuna fish?!”, then I get it. But give it a shot. And the capers add just the right amount of salty twang… you just have to try it all together, seeing is believing!
