Christmas is looming ever so quickly. If you’re like me and enjoy gifting baked goodies to your family and friends, you’ve come to the right place. This Passionfruit Curd is perfect for that. It’s a rather unusual gift I’ll admit – cookies and cakes are usually gifted at Christmas time, right? – but you’ll be the talk of the town with this curd.
I usually eat mine with a bowl of yogurt and plain crushed cookies (that’s my healthy version of a passionfruit cheesecake), but it’s just as good when it’s eaten just like that, straight off a spoon. You can eat this curd piled on top of fresh white bread, or dolloped over muffins and pancakes.
Also, don’t worry if you’re unable to find fresh passionfruit at this time of year. Tinned passionfruit pulp works wonders and tastes just like the fresh stuff.
All you have to do is make this curd, pop it in pretty jars and attach a label. Maybe even tie some ribbon and attach a spoon to it. Too easy.
