I’ve heard rumors that there are people who don’t eat leftovers. And honestly? I just don’t get it.
Our family has always gone way overboard when it comes to cooking turkey, which means leftover meat for days. And it’s true that eating turkey morning, noon and night can get a little tiring.
This year we decided to really have fun with our leftovers. Like these cranberry and turkey quesadillas? They’re buttery and creamy with a sweet and tangy cranberry sauce (made even better when you add a little spice to it, yummmm!)
This recipe calls for using fresh cranberries to make your salsa, but I think that you could even add a few additions to your already existing leftover cranberry sauce to compliment your food.
Not sure that the stuff from the can is gonna cut it– in fact, I have no idea because I’ve never tasted it.
Trust me! One bite of these and you’ll be wishing that every day was the day-after-Thanksgiving.
