Back in the day, I used to say that I was fond of “sneaking” healthy stuff into my kids’ foods, but I’m not entirely sure that’s an accurate way to describe it. I’ve always been honest with my family about what I’m feeding them, so I don’t feel like sneak is the right word.

For example, my kids love french toast. They would eat it every day if they could. It’s a fast, easy breakfast that I can make ahead of time and freeze in advance, so it’s a pretty perfect go-to for me.

Each weekend I whip up a batch of French Toast for the kids and I freeze it, then during the week they can grab two frozen pieces, pop them in the toaster, top with syrup and they are good to go. But today I wanted to share with you another fun version– a savory one!
For this, I use the traditional eggs (from our backyard chickens) and a splash of milk, then I mix in fresh herbs and grated parmesan cheese. Mm!
You can use this savory french toast in a ton of ways, but my favorite way is topped with a runny fried egg. And if you have a few extra minutes, you can make a yummy cheese sauce and really kick it up a notch!
