Between playgroups, house guests, homeschool groups, backyard barbecues, potlucks at the park and hurried back-seat picnics in between gymnastics and sports practices– we’ve been a very, very busy family this Spring.
For us the key is prepping food ahead of time. And in order to avoid breaking the bank during all of these excursions, we cut corners as often as we can. For us there’s no substituting garden-fresh herbs and produce but we’ve found a happy medium when I can find a great bargain on pantry staples.
Mix them up with some fresh veggies and a little dressing and you’ve got a picnic-perfect Pasta Salad that’ll be the star of your next picnic! Since it’s a frugal dish it’s the perfect thing to serve to a crowd on the cheap ‘n easy. Another thing I love about this dishes like this is the versatility. I chose to add banana peppers, olives, tomatoes and cucumbers, but all of these measurements are simply guidelines: like most salads, this one is easy to play around with.
