I have come to realize ‘gluten free’ is practically nonexistent in the Italian language. As a gluten free Italian, it feels wrong to be deprived of brick oven pizza, lasagna, baked ziti and chicken francese. My absolute favorite Italian dish is my grandmother’s recipe for spaghetti bolognese. I’ve modified my family recipe, originally passed down by my mom, so I can still enjoy an incredibly tasty dish and all of the nostalgia that comes with it.
This healthier recipe is not only free of gluten and sugar but it has a dairy free option, too. It’s also made with two superfoods, tomatoes and quinoa, that keep you feeling full and energized.
