We made it to 2017, baby! January is one of my favorite times of the year.
Although to be completely honest, I’m not a big fan of the flash-in-a-pan resolutions that only last about a week. You know the ones I’m talking about, right?
I’ve made a few myself, but I’m never surprised when I break them.
What I do love about the New Year is that feeling that we can accomplish anything. Of goal setting and deliberately thinking about where we are and where we want to be 12 months from now.
If eating better is on your list of resolutions this year, you’re not alone. And if you’re totally overwhelmed trying to figure out what better is, you’re DEFINITELY not alone. It’s a feeling that many of us struggle with, especially myself, and although I wish there was one clear-cut answer, the truth is that the path to wellness is different for everyone and it begins with little baby steps.
This recipe was created as an experiment with that baby-step mentality in mind. These breakfast muffins are full of fruit (I used strawberries, blueberries, bananas, even applesauce in some!) and topped with a yummy lemon curd. They’re made with a secret ingredient, too:
The other special ingredient in these muffins is this lemon curd.
Now look, I’ll be the first to admit that I know nothing about lemon curd, and a lot of you may turn up your noses at what I’m about to say, but I’m totally smitten with this Microwave Lemon Curd recipe. I know what you’re thinking– but just give it a try if you’re looking for an easy, delicious topping. It’s seriously delicious.
If your goal is to take some baby steps this year, then starting off your day with a great breakfast is a great way to do it! Mother was right, it IS the most important meal of the day. Fortunately, it’s never been easier to find healthy and tasty breakfast from Post cereals. They contain fiber that prepares your body for the day and keeps you full until lunch. And they have whole grains and nutrients, including protein, fiber, B vitamins and antioxidants.
