There’s no doubt about it: we are a pizza loving family. From regular baked pizza, versions charred on the grill, pizza rolls, breakfast pizza.. you name it, we eat it.
What can I say, I’m a sucker for fluffy dough, herb-infused sauces and of course, don’t forget to load it up with piles of fresh, creamy cheese!
Our pizzas are rarely fussy and rarely contain a ton of ingredients. Instead, we focus on using only a few, simple things. Veggies from the garden, fresh herbs are my favorite, maybe some fresh cut meat like pepperoni or prosciutto. And.. I did mention cheese, right?
These sliders were inspired by our love of pizza. However, hot summer days dictate that lunches are best served cold, which prompted us to make pizza sliders. I still used our infamous 15 minute pizza dough recipe, but instead of stretching the dough I separated the batch into 10 balls and let them rise in muffin tins so make a more sandwich-y shape.
I made two different versions. The first was kind of a traditional one for the kiddos: fresh mozzarella, thickly sliced pepperoni and a dollop of sauce. The second one was for me, since you know I love to eat from my garden! I had a fresh basil leaf, roasted red pepper, fresh mozzarella, and a drizzle of balsamic vinegar.
