Listen: do you hear that? It’s the sweet, sweet silence of back to school time.
Actually, if we’re being completely honest, it’s far from quiet for me right now. I’ve got a precocious 18 month old on my lap, his face literally inches from mine; he squirms around and plays his favorite game where he pushes my hands off the keyboard so he can type his own story. Sometimes he takes a break to stick his fingers up my nose.
My life is glamorous, I know.
With this kid undertow, it’s hard for me to find time to do anything these days. I’m really trying to find ways to simplify, consolidate and delegate in other areas of my life. Since it’s already time for the big kids to start school, getting a good lunch-time routine in place is a big priority for us.
When Nature’s Own asked families to share how they come up with their own #lunchboxcreations I knew that I wanted to share our new strategy. I’m pretty excited about my solution to simplifying lunch! So far it’s been working beautifully.
I buy sandwich supplies in bulk, arrange everything on the table and encourage the children to get creative. They each make a set of 5 sandwiches and I use up any leftovers for my husband to take to work with him. Then we put each sandwich in its own sandwich bag, seal it and label it with a dry erase marker (that comes off easily so we can reuse the bags), lay them flat in the freezer and that’s all! Each morning the girls can grab a frozen sandwich and put it in the their lunchbox, by the time they’re ready for it it’s already thawed out and ready to eat.
By filling the table with ingredients that I feel comfortable about, I’m trusting my kids to use their own creativity and judgement when they put their lunch together. For a busy, busy mom who constantly has my hands full, this has been a super convenient way to tackle lunches. There are a few things to keep in mind when preparing these, the biggest one being:
Keep the veggies on the side. Maybe keep a small container in the fridge that has pre-chopped lettuce, tomatoes, cucumbers, sauerkraut, pickles, etc. You don’t want to freeze and thaw sandwiches that have these things on them, so keep it easy to grab so that your kids can throw them in the lunchbox and add them at school. Extra bonus points because your cold sandwich will keep your add-ons cold as well!

- Entrants can either submit a link of their video or photo from Vine, Instagram, or YouTube, or can upload their own photo as directed on the sweepstakes form.
