I’ve never been one for jealousy, but as I sit here by the fireplace with a blizzard taking place right outside the window beside me I can’t help but feel a pang of envy. Because.. and this is difficult for me to type.. right now is strawberry season in Florida.
It’s not fair, right?
So while we’re shivering our booties off just a few states north Floridians are enjoying fresh, local produce that’s in season and absolutely delicious.
For now, though, let’s focus on the positive. And that positive starts with an “s” and ends with a “berries” and they’re red and delicious.
My girls and I love strawberries, and my oldest daughter recently realized how quick and easy it is to create a simple yet delicious breakfast: Florida Strawberry Parfait. It’s got all of my favorite elements: It’s quick, filling and delicious. You could even pack in a little extra nutrients by making your own yogurt (in the crockpot, perhaps?) and graham crackers.
