It’s no secret that I love muffin recipes. Savory, sweet, fruity, salty… just gimme the lot! I love experimenting with new flavors and combinations, so it’s not surprising that muffins are my most-blogged-about recipe.
I’ve had a few near-failures when trying new recipes out, but I found that muffin recipes are all pretty forgiving. Just remember to be generous with all your ingredients and you should be set!
Spinach and feta has got to be one of my favourite flavour combinations. I sometimes scramble an egg with spinach and feta, then have it for lunch. I’ve tried it in pancakes and in tarts and pies. Mmhmm. Yum.
This recipe isn’t just a spinach and feta muffin recipe though, for it’s loaded with other goodies. Add some chilli flakes, garlic powder and ground pepper, and you’ve sold me. Capsicum, zucchini, parsley, sundried tomatoes and even corn could be added too. This recipe is pretty versatile.
Plus with these, you can make one big batch, freeze them, then pop one in the microwave every morning for your breakfast. Easy peasy. (except maybe the self-control bit. They’re pretty moreish.)
Man, now I’m craving this stuff. Thanks, you guys. Excuse me for 30 minutes while I go bake another batch of these and come back. No really, you can have these done from start-to-stomach in just 30 minutes.
