Eggplant Roundup

I’ve had two large eggplants sitting on my counter, waiting to be prepared, for about a week now. Eggplant and I have a love hate relationship. I love to eat it, but I hate that I never know what to do with it. Being uninspired isn’t such a horrible crime, but the crazy thing about this particular instance is that every day I’ve had an eggplant recipe arrive in my inbox via my favorite blogs.

Here is my eggplant recipe roundup. These are the recipes that my favorite blogs have posted about eggplant in the past week. No kidding. How can I possibly have any excuse not to cook these delicious purple veggies for dinner tonight?

    I’m having the same problem, 2 eggplants on the counter and no idea what I want to do with them..I’m thinking of trying this recipe, mainly because I have everything already on hand and wouldn’t need to go to the store.

      Claire, I made your eggplant lasagna last night and my co-workers want to thank you for the HEAVENLY aroma in our health center today—-YEAH for leftovers! :) The recipe is fantastic & everyone is enjoying it. Threw in some cannellini beans like you suggested and even got a meat & potatoes co-worker (M&PC for short ;) to like them! Thanks again for the recipe!
