As I’m writing this my four month old is napping in the bedroom close to me, and it’s kinda crazy to think that right around this time last year I was just finding out that I was pregnant. I remember it so well because it was really tough being in my first trimester with veggies growing around me and no time or energy to harvest and preserve them.
I especially remember the aversion that I had to cucumbers and how I wanted nothing to do with canning them. A bunch went to waste. I just couldn’t do it.
So this year I’m going to redeem myself, because I planted a crapload of cucumber seeds and they WILL be pickles before summer is over.
Anyway, as our huge harvest hasn’t come yet here’s a quick and dirty tutorial on how to make refrigerator pickles. No canning, waiting or bulk processing necessary.
