Today I am eager to share with you this match made in heaven: goat cheese, caramelized onions, cherry tomatoes, fresh basil and salty olives; wrap in a puff pastry and you get a hand-sized dish that’s perfect as an appetizer or a meal in itself.
There’s something about goat cheese that just draws me in. I love the creamy texture, the slightly sweet taste with just a bit of tang.

It’s slightly creamy, slightly crumbly texture lends itself well to just about anything, but I love it baked inside of a puff pastry. I made this recipe to impress some guests that were visit us from out of town. This is one of those things that just seems fancy– the reality is, like most of the recipes we share here, it’s simple enough for anyone to pull off!
Actually, I had planned on making enough to serve at a barbecue we were hosting that evening but they didn’t last that long. We greedily gobbled all of us these up, standing up in the kitchen, hunched over the counter– you know, the way some meals are just meant to be eaten.
